Due to popular demand, am teaching two of Carbone’s signature dishes with a slight gourmet twist by yours truly :)
Learn how to make the spicy vodka conchiglie/rigatoni from scratch (will add sun-dried tomatoes to the sauce and some other ingredients to give it a kick). Also the famous gigantic meatballs. Learn how to keep the meatballs juicy and also round at the same time (usually mutually exclusive).
